Nature’s Awakening: A Captivating Forest Ceremony
As spring blossomed, Rachel and Mundo chose to share their wedding day with us at Taconic Ridge Farm on May 28th, 2023. In this season of renewal, where nature awakens, their captivating forest ceremony marked the beginning of their joyful journey.
A Toast to Love
Following the ceremony, guests proceeded to the cocktail hour held in the pavilion. Here, they enjoyed a welcome cocktail, our signature smoked strawberry and Sumac Sparkling lemonade. As well as a few passed snacks, including Smoked Trout with Ramp Labneh and Pork Belly with Snap Peas drizzled with Burnt Honey. Cocktail hour also included our raw bar add-on where guests enjoyed Copps Island & Wellfleet Oysters hand shucked on site by Rachel from Precious Oysters. As well as Cold Smoked Shrimp, Marinated Mussels in Their Shell, and ceviche.
Flavors of Late Summer
As cocktail hour came to a close, guests made sure to make a stop at the negroni bar before taking their seats for an unforgettable 4 course meal, family style. The first course began with Charred cabbage caesar topped with Garlic Bread Crumbs, Sheep’s Milk cheese and a fish sauce dressing. As well as charred runner beans paired with creamy Cow’s Milk Burrata, drizzled with Brown Butter. For entrees, the coal roasted sea trout with charred escabeche and Ember roasted game hen with burnt pea & honey Gremolata. Seasonal sides, like our Grilled asparagus and snap peas complemented each entree.
A Sweet Farewell
The evening ended with Smoked Strawberries combined with Raw Sheep’s Milk Cream and Cacao Cake with Saba and Sumac, along with Blistered Maine Blueberries over Grilled Butter Bread and Condensed Milk Cream drizzled with Walnut Syrup for dessert.
